Bánh Xèo at Phuong Nam Restaurant is a sizzling, crispy turmeric-yellow rice-flour crepe stuffed with shrimp, pork, and bean sprouts — wrapped at the table in fresh lettuce and herbs and dipped in light nước chấm.
The name bánh xèo literally means 'sizzling cake,' for the sound the thin rice batter makes when it hits the hot pan. Ours is cooked the southern Vietnamese way: thin, crispy at the edges, golden with turmeric, and folded over a generous filling of shrimp, pork, bean sprouts, and onion.
Eating bánh xèo is an experience — tear a piece of the crepe, tuck it into a leaf of butter lettuce with mint and Thai basil, roll it up, and dip into our house nước chấm. It's a Phuong Nam dish that surprises first-time visitors and keeps them coming back.
